Last night we had chicken and a lemony bean salad. I'll be having the bean salad leftovers for lunch in a few minutes, probably wrapped up in some tortillas leftover from dinner a few nights ago.

Tonight I'm making a shepherd's pie of sorts. Ground beef seasoned with nasi goreng spice mix, layered with some caramelized onions, some carrots and all topped with mashed potatoes.

Yesterday and today, my dinner was eaten at lunch time. Chicken paprikash, mmm. For Tom, breakfast for dinner, lol. An omelet, bacon, and a bagel. Jake had scrambled eggs and toast. I had vanana yogurt with granola for dinner. YUM.

Same today for me. Tom's getting ribs and salad from Trader Joe's and Jake will most likely have grilled cheese and low sodium tomato soup (TJ's- so good) and a veggie.

(Can you tell I went to Trader Joe's today?) :D

Last night we were tired and lazy, so we had frozen fish and chips, although we managed to get enough energy to defrost and cook them. ;)

Tonight, we're going to the new restaurant that opened just down the street. We know the couple that owns it and stopped in on the way home Friday night and had a glass of wine and got treated to some slices of salami. If everything else tastes as good as the wine and salami (carefully chosen and great flavor), then dinner should be excellent tonight. He even imports Texas beef! (Yes, we'll both be having steak tonight!)

Aw your steak and I are from the same place, Indy! :D

Tonight I had brisket wrapped in a flour tortilla and a side of potato salad. My friend Jeff had been cooking that brisket since Friday. It was tender and delish!

Making a spelt flour pizza - part of low cab/low GL diet :D

Will report back - have various healthy toppings - pine nuts, rocket, sundried tomatoes, chicken.

Should be good!

I'm not doing anything remotely healthy for dinner tonight. We're having cubed bacon, chicken breasts, zucchini, and potatoes all drowned in a cheese sauce. :worry:

Yum, chicken and parmesan an excellent combination!

Having marinated and grilled chicken - back on the low-carb thing!

Chicken fajitas....mmmmm....so delicious. I just hate the prep for some reason, not that it's hard. The chicken's marinating in the fajita/teriyaki mix; lettuce is shredded, onions and red/green peppers are sliced. I use these awesome tortillas by LaBanderita that are low fat low carb wheat and they're so soft and yummy. We use 2% cheddar and low fat sour cream...so I can tell myself they aren't too bad. :worry:
