Sounds good. I usually mix spelt flour with a lighter flour otherwise it can get a bit dense for me.

It was alot denser then normal pizza dough....maybe next time I'd mix it for that. :D

Would make a great stodgy winter loaf though! :lol: :tonqe:

Yes, spelt would make a good winter loaf. My mom also uses it with cakes etc. but it's really not the right texture of anything like that. If trying to go wheat free, with the pizza dough I'd with a combo including rice flour and maybe corn meal along with the spelt.

Ok, here is one for the Americans here who like baking also :lol: Have any of you got a good carrot cake recipe you wouldn't mind sharing? One with proper cream cheese frosting (we don't have packs of cream cheese over here that I used there so it may not quite work out for me) or an awesome muffin recipe? Again, alas the UK version of a muffin pales in comparison. Any with toffee or some such might be nice 8)

Sherry, my mom makes THE finest carrot cake in all history of carrot cake. I'll see if I can't get the recipe from her.

Just found it in my e-mail from a while back. Oh GOD is it good. It's really one of my alltime faves.

Carrot Cake or Zuccini Cake

1 1/2 cups brown sugar
1 1/2 cups apple sauce or vegetable oil
4 beaten eggs
2 cups flour
1 T cinnamon
2 t baking soda
1 t salt
2 cups grated carrots or zuccini
1 cup chopped nuts, if desired

Bake at 350 degrees for 45 - 50 minutes, do not over bake

Cream Cheese Icing

8 oz. package cream cheese, I use lowfat
1/2 cube butter
1 box powdered sugar, sifted
2 t vanilla

P.S. If you look in the old family pic thread, the one of my 4th birthday does indeed have this cake center stage :D

I will vouch for this recipe, Sherry. I had basically the same recipe given to me by someone who made carrot cakes for NYC restaurants. The only difference was I always used vegetable oil (but the applesauce would be healthier), and I was a little generous with the cinnamon. Also, walnuts were optional to add to the mix in mine. I always used them, and folks really loved it.
The one thing to watch is the temperature of the frosting. If you're not careful, it can get runny. I used to make sure it was nice and cold when I iced the cake, and I kept the finished cake in the fridge. Let us know how it comes out.

Oh Nancy, that's quite interesting. I don't know where my mother originally got the recipe but she might have gotten it from her own mother. I know that she's been making it for at least 30 years. Mmmmmm, I would love some right about now.

Here is the recipe for yummy crockpot chicken :P
I usually only do 2 chicken breasts (or 3 small ones) because I have a small crockpot. I also use low-sodium taco seasoning. :wink:

* 1 package Frozen Corn, We Love Trader Joe's Fire Roasted Corn
* 1 can Black Beans, Drained
* 4 pieces Chicken Breasts; Frozen, Skinless, Boneless
* 1 jar Salsa
* 1 envelope Taco Seasoning, Penzy's Or Chi-Chi's

Preparation Instructions

Pour the bag of frozen corn in the bottom of the crock pot. Add the drained black beans. Place the frozen chicken breasts on top of the beans and sprinkle with the taco seasoning. Pour the jar of salsa over the top.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

Remove the chicken, shred it, then add it back to the crock pot and toss with the corn and beans. Serve with all your normal taco fixings. It’s delish with cilantro-lime rice.
